creamy mushroom and spinach lasagna

Hello Friends!  How is your week going so far?  I’m definitely not 100% quite yet, but boy I’m feeling better!  I actually slept through the night without waking up once and made it to spin this morning after 2.5 weeks of blah.  I kept it super moderate, and while my chest was a little tight, I felt ok.  Hallelujah!!!!

It’s casserole time!  These are great because they make a butt-load of food and are comforting, yet can also be packed with nutrition.  We aren’t having the nasty snow storms and crazy weather like the east coast is having (yikes!) but it has been actually pretty chilly here for us weather wimps out in the west! 🙂  This is perfect for the chilly weather. and so it begins

The countdown that is!!!  aaaaah! In about 6 days I’ll be riding my first century bike ride in Napa, CA and supporting the great cause of the LiveStrong Foundation.  I really can’t believe it.  honestly.  When Chris and I first started getting somewhat serious into cycling, and he started doing century rides, I thought . .  nah, I can’t imagine riding 100 miles?! Now, about 4 months of training later, I feel pretty darn strong and 65 miles isn’t all that bad, so there’s no turning back now.  This is it!   (more…)

lots of comfort & the winner is . . .

Hello everyone!  How is your week going so far?  I was so impressed by how many of you are on top of all your gifts this year!  I am still way behind, ugh!  But I’m not going to freak out about it.  I am also feeling much much better, still kind of coughy in the mornings, but much better thank goodness.  Humidifiers help me tremendously and I usually sleep with a sheet over my nose so I have moist air to breathe.  Is that weird?  . . .

I really enjoy the foods of winter because they are warm, comforting and mighty tasty!  It seems like I’ve been on a roll lately with the down home country cookin’.  These kinds of foods are also the best for leftovers and can be transformed to other dishes.

I just wanted to share a couple nice recipes that I enjoy during the winter and also announce the coconut water giveaway winner!!

The first one is cornbread-topped chicken pot pie mmmm!  Chris and I really enjoy this one and the addition of the leeks gives it such a wonderful flavor.  Give it a try it’s really yummy.

The next one is my version of Italian-style meatloaf.  Gotta love all that gooey cheese in the middle!  This time I paired it with sautéed haricot verts with caramelized shallot and pecans, along with some roasted fingerling potatoes.  You know I never really eat ketchup unless I’m at a restaurant or if I make meatloaf!  For me I have to have ketchup with meatloaf 🙂

Mix this all in a big bowl:

  • 2 lbs lean ground beef
  • 1 jar TJ’s bruschetta mix
  • 1/3-1/2 cup quick oats
  • 1 egg
  • 1/2 onion, diced & sautéed in a pan (I threw in some mushrooms too)
  • seasonings:  Herbs de Provence (or Italian Seasoning), garlic powder, salt, pepper
  • topped with a bit of ketchup
  • Mozzarella cheese for stuffing

IMG_5888 Pre-heat oven to 375 F.  Take about a handful of the meat mixture at a time to form about four, 1/2 mini meat loaves on a foil lined broiler pan.  Place some mozzarella cheese down in the center and then top with the rest of the meat mixture.  Make sure there aren’t any seams open, or the cheese will ooze out when baked.

Bake until a thermometer registers 155 F, take them out of the oven and let rest until the temperature raises to 160 F.  Enjoy!!

With the leftover meatloaf this time I chopped it up and threw it in some tomato and roasted red pepper soup from TJ’s, along with some veggies and pasta.  It was great & easy!

Thank you for your interest in my post about coconut water.  I find it fascinating!  I also agree with many of you on the downside of its expense.  It is pretty darn pricey at $1.99/per 8oz carton and a bit less if you buy the larger bulk carton.  It’s also not as accessible as regular sports drinks and can be very hard to find at grocery stores here in the US.  It sure is a refreshing treat though.

On Friday we are having some friends over for a pizza-making party!  I’m excited because I love these kinds of parties.  Everyone gets to make their own pizza and chose from different toppings.  It’s not really holiday themed, but it’s fun & will involve some vino!  Saturday I’m going to be baking like a mad person for the cookie exchange I’m going hosted by Kristen, the swanky dietitian.  I’m looking forward to it!  It’s going to be tough with all those cookies around calling my name, but we’ll see how I do.  I’m thinking about making a gluten-free chocolate chip cookie from Tam, but I can’t decide on the other?  I was thinking either chocolate baklava or mint chocolate cookies.  What do you think I should make??  There are too many good recipes out there, help me decide!

sticking with it

IMG_5487Happy Friday all!  Since we met last my knees were in a bit of a fuss for the 4-5 mile run I decided to put them through last Sunday.  I am happy to report that they are feeling much better and Diana introduced me to a training program called ‘Couch to 5k’.  It’s a simple training program that combines running and walking, where the running is gradually increased until you can run a full 5k without stopping.

image At first I was thinking, well I’m not a couch potato!  I need to be running 3 miles right off the bat because I can handle it.  Well, you know what, this program is going to be just what my knees ordered I believe.  I did the first 30 minute session yesterday morning at 4:30am and was even able to do a weight lifting class that evening at 8pm without any mysterious aches and pains!  Yes!  The best part is it has an iPhone app too that tells you exactly when to run and when to walk.  Yes!  I’m feeling empowered already and am actually looking forward to my next lil session.  So I guess I’ll be sticking with this running thing a bit longer 🙂

I also signed up for my first 5k Turkey Trot!!  I’m really excited, and while it’s going to be way before my C25K training will be over, I figure I can just take it easy and see how it goes.  Anyone else doing some planned physical activity on that holiday weekend? Great way to balance out all those good eats, although we will all be practicing proper portion control, right?!

I still can’t get used to this time change!!!  The lighting is just terrible in my house now by the time I get home and I think I’m going to have to search for some kind of lighting station or special photography lights??  Anyone know of something like this that is reasonable?

I’ve been wanting to share this casserole recipe because it has become one of my favorites among many.  I love casseroles because they can be easily adaptable to a healthier profile and are so easy!

Quinoa Chicken & Broccoli Casserole

Serves 8

Ingredients

  • 2  tbsp  butter, 1 tsp olive oil
  • 1  medium onion, diced
  • 2  garlic cloves, minced
  • 1  pound shiitake or other mushrooms, sliced
  • 3 tbsp AP flour
  • 3-4 cups skim milk (or you could do 1/2 broth, 1/2 milk)
  • 3-4 heads of broccoli, chopped
  • 2 cups quinoa
  • 1-1.5 cups Italian cheese mix, shredded (I used TJ’s Italian Mix)
  • 1/2  tsp  salt, all purpose seasoning, garlic powder, 1 tsp thyme, 1 tsp herbes de provence, pinch of cayenne
  • 2 cups cooked chicken breast meat, chopped

Preparation

1. Heat 1 tsp olive oil in a large nonstick skillet over medium-high heat. Add onion, and cook. Stir in garlic, and cook 1 minute. Add mushrooms, and cook 8 minutes or until softened.

2. Melt 2 tbsp butter in a large Dutch oven over medium-high heat. Add flour, and cook, whisking constantly, 1 minute. Slowly whisk in milk, and cook, whisking constantly until mixture thickens.  Add broccoli and quinoa to cook halfway.  Remove from heat and slowly whisk in 1/2 cup cheese, seasonings, mushroom mixture and chicken.  Transfer to a lightly greased 13- x 9-inch (4-quart) casserole dish.

3. Cover and refrigerate overnight, or bake, covered with foil, at 375° for 30 minutes or until bubbly, uncover, sprinkle with the rest of the cheese and brown for 10 minutes.

As far as the weekend plans . . .

Tonight Chris and I are heading out with some friends to a place called Casa di Amore.  They have great Italian food and also a live crooner that sings till the weee hours of the morning and sounds just like Sinatra.  I just love that kind of music, especially with a nice glass of wine.  We’ll see how pictures go, as you can imagine the lighting is pretty low to ‘set the mood’.

photo (2) At the Lee’s Wine Experience that we went to a little while ago we found a Pinot Noir that was out of this world called Ritual.

We thought we should order some since it was such a special find.  Well, I guess we got a few of them!!  We aren’t going to drink all these ourselves, but will take a few bottles for Thanksgiving and for gifts.

Other than that I would like to get another run/walk or ride in and finish tackling my proposal/presentation for Research Methods.  I have the lit review mostly done and now have to start working on the methods/statistics, eeek!  This is my area of weakness.

thesis drama & a nice bike ride

IMG00029-20091101-0945 (2)With the time change I can’t believe it’s getting dark so soon.  Even though this inevitably happens every year, I never can quite adjust.

It just seems so darn late now and all the wonderful, precious sunlight dwindles faster and it’s harder to get good food pictures!

Anywho, the weekend for me was pretty unproductive.  Several projects/presentations are fast approaching the due date and I’m trying to find the time and motivation to get them done.

I also had some disappointing news with my thesis . . . First, the professor who first told me she would be my chair and help form my committee pretty much blew me off and I just found out that she eagerly said she would chair another student’s thesis that isn’t even related to sports nutrition.  I’m trying to not take it personally, but I can’t help it.  Then, ever since I sent my research outline to my chair (twice) over a month ago, he hasn’t responded to me at all.  I spoke to the graduate coordinator about it and he said that he could be my chair, but he doesn’t really do lab work.  What?  I was really wanting to work in the lab, but now I guess I have to come up with a whole new idea and it has to be more like survey research.  Any ideas???  At this point I’m just desperate for anything, very disappointing. *sigh*

Other than that we made some yummy dinners!

IMG_5303Since I had Friday off, I spent most of the day running errands and getting ready for dinner.  I made fresh pasta manicotti and fettuccine too.  Fresh pasta is so cheap to make and you get a butt load of it!  The whole drying rack was full by the time Chris was done rolling/cutting it in the mixer.

I stuffed the manicotti with a mixture of ricotta, mozzarella, fontina, parmesan, spinach, chicken sausage, and Italian spices.  I also made a homemade tomato sauce in the crock-pot which is very easy.

Did you have a good Halloween?? We didn’t even get dressed up this year!  Terrible.  We did hand out some candy and fruit snacks to the few kiddies that came in our neighborhood.  We bought waaaayy too much and now we must get rid of it asap!

I spent most of the night trying to find research articles and a new thesis topic (with no luck) and went to bed pretty early even with the time change.  I’m so glad we didn’t forget, which is unusual!

Sunday morning Chris and I went with the Green Valley Cyclists on the Lake Mead Loop trail.  It was just about 50 miles with 2300 ft of elevation change.  This is the longest I’ve done so far and boy my legs were sure letting me know it by the end of the ride!  My legs weren’t used to all that climbing.

At this point in the ride I was still feeling pretty strong and there were some awesome views of Lake Mead . . .

I also did a little calorie calculation experimentation with an equation I found from an RD.  I’m not sure where this equation was developed or if it’s reliable, but I love playing with numbers 🙂  It did seem pretty accurate with what my HR monitor says.

118 lbs x 0.0561 (15mph) = 6.6198

6.6198 x 60 x 3 hours = 1,191 kcals

2300 ft gained/100ft x 22 = 500 extra kcals  = 1,691 total kcals

Min – x 0.3/3 = 170kcals/hour         Max – x 0.5/3 = 281kals/hour

I went with about 200kcals/hour to try to match, which seems about right.  I think they multiplied the total by .3 or .5 because of actual absorption of what’s expended?

Let’s see if I matched this . . .

  • Breakfast: big bowl of cereal, 1/2 banana, 10oz H20 – 500 kcals
  • On the Ride:
    • luna moons – 100 kcals
    • Power Bar Energy Chews – 300 kcals
    • Gatorade (42oz I think) – 180 kcals
    • 1 L of H20
  • Post Ride:
    • Smoothie – milk, 1/2 banana, strawberries, blueberries, scoop whey protein, honey, chia seeds, flax, wheat germ, peanut butter – 500 kcals
    • leftover 1/4 omelet, hash browns and 1/4 pita – 300 kcals
    • 1 L of H20
  • Dinner:
    • Beef and Barley Soup and cheesy bread – 650 kcals
    • glass of milk and 1 TJ’s cookie – 160 kcals

total kcals for the day –  2,690 kcals  (net gain of 1,000 kcals)

I’d say I didn’t do too bad, but still 1,000 kcals net gain isn’t really enough, but I’d also say I have a few extra kcals in storage since my mom came 🙂  It is important for athletes and active individuals to maintain proper nutrition throughout training and off days to make up for potential losses.  I’m no athlete, but it’s just fun to try things and see.  I usually wear an old HR monitor, but I guess my data capacity was full so it didn’t even work 🙁  Calorie expenditure is just fascinating to me.

This smoothie was amazing and I added a huge heaping spoonful of peanut butter so I could really taste it, yum!  Funny it’s in a beer glass 🙂

aaaah, cheesy toast is a great dipping vehicle for soups.  I think fontina is my favorite cheese, next to goat cheese.

Soup is great for post-workout replenishment.  It gives extra fluids, veggies, a bit more iron from the beef, fiber and carbs from the barley and even a bit more salt for electrolyte losses.

happy camper

IMG_4155 First off I just want to say thank you to all of your insightful comments to my last post.  You guys are truly amazing!  I loved hearing all your input and different insights to the topic.  I felt it was really important for me to get that out and I honestly couldn’t believe their explanation after the fact.  I really appreciate all your kind words from the bottom of my heart 🙂

On to something fun . . . a little vacation!

Chris and I wanted to do a little something together before the school year starts up again and we didn’t really have many funds to do something too crazy, so we decided on camping!!  You can’t beat $12/night and the great outdoors, right?!  We also decided to treat ourselves with one night at a B & B called The Anniversary House.  We went there a little while ago and absolutely fell in love with it.  It was really a treat after camping!

Originally we were going to go camping this weekend coming up, but we kept seeing the weather report that didn’t look to promising.  Camping in the rain is no fun.  We didn’t want to risk it, so on Friday afternoon we decided to leave last minute on Saturday!  You all know that I like to plan things, so I was a little freaked out by the fact that we didn’t have anything ready.  And camping’s not the kind of thing you don’t plan for! (of course this is what my head was telling me)  So I ran to the store after work and got together some recipes that we were thinking of making when we went up there with the dutch oven.  We also had to run a few errands Saturday morning to get everything, and get Buster off to the vet.  We finally hit the road by noon, and it’s only about a 3 hour drive which is not bad at all to get away.

Because we decided to go camping so last minute, we also didn’t have a reserved spot and had to cancel our other one.  Yet another voice in my head was saying, what?! no reservation, how are we going to find a spot in the afternoon on a Saturday when everyone’s probably got the good spots already? We decided to stick with the same campground and see what we could find for walk-ups.  And what do you know . . . we got the last one!  It was right by the toilets and trash bin, but we didn’t care.  It still had some pretty good shade, and it’s camping, so we’re supposed to be roughing it.

Oh my gosh!  I can’t tell you how great it was just to get away, just the two of us.  I mean everything was smoky from the campfire, we had to sleep on the hard ground, it was 29 degrees F at night, but you know what, I haven’t seen Chris that happy in a long time with all this icky economy work stuff.  It was just really neat and made me happy too.

We got in Saturday afternoon and immediately started setting up camp, and of course I wanted try out that dutch oven!  We didn’t have any wood and the camp host said they were out, so Chris had to go searching, but finally found some thank goodness!

IMG_4051Dutch ovens are amazing, it’s like a one-pot wonder that you can practically make anything in!

We decided to make Cornbread Topped Chicken Pot Pie.  I’ve made this recipe before, but forgot to account for the altitude change.  The cornbread went crazy!  But it was still oh so good and comforting once that sun went down and the temperature dropped drastically.  Yum!

We didn’t mind the charred bits from the fire haha  It was sooo smoky.  We had to dodge the smoke or it burned our eyes like crazy!

And of course we had to have s’mores, lots of s’mores!  This is my ultimate favorite thing about camping.  I love how the marshmallows plump up nice and big like the perfect pillow and vehicle for chocolate!

The next morning Chris got that fire going, while I huddled under the sleeping bag trying to maintain warmth without my human heater.  It’s funny because once that sun came up it was actually pretty hot!

IMG_4081 Breakfast was Fresh Fig Oats!  I saw these fresh figs at TJ’s and I had to do something with them.  Fresh figs are just special and yummy!

I mixed and mooshed about 3 fresh figs in with 1/2 a banana and added that to the oats as they cooked.  Then I topped it with some more fresh fig, banana and TJ’s snack granola.  Of course we had to have a scoop of peanut butter with it too.  I just love oats because they’re so easy and filling.

After breakfast we packed up our gear and headed to Bryce Canyon for some hiking.  Boy was it beautiful!  I can’t even explain it, and my pictures don’t even begin to do it justice.  It was so surreal and peaceful there.  It really takes one back to the essence of life and marveling in the wonder of it all.

This is a place called Wall Street and it was so neat to see.  There are two giant rock walls on both sides as you zig zag your way up the mountain.  Every step there was another great picture to be taken.  I had to be careful I didn’t fall down the mountain while I was gawking in amazement!

Of course I brought lots of snacks!  You never want to go unprepared!  Here I am enjoying a Luna Bar after our 2.5 mile hike.  I think the toasted nuts and cranberry is my fav flavor.  180 kcals and 9 grams protein, yes!

yogurt battle

100_2939I don’t know why, but I am liking Mondays for some reason lately.  Even though I don’t like to see the weekend go, Mondays just fly by so fast for me.  It’s like there’s a fresh set of tasks to accomplish and it gets me going.  Even though I love Fridays, by the end of the week I tend to drag!  What’s your favorite day of the week and why?

For dinner we had quinoa-stuffed bell peppers.  I just can’t get tired of this recipe.  I think I’ve made it at least 5 times now and it’s soo good!  This time I added some chopped zucchini and had apple chicken sausage on hand.  You should give it a try.

Quinoa Stuffed Bell Peppers

(adapted from everyday food)

Yield

4 servings as a filling main, or 6-8 as a lighter dish with a nice salad

  • 4 red bell peppers
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 zucchini, chopped
  • 2 chicken sausage links (any flavor and removed from casings)
  • 2 garlic cloves, minced
  • 1 tsp ground coriander or any blend like Mrs. Dash or Italian seasoning would work
  • salt and black pepper
  • 1 cup quinoa, rinsed
  • 1/3 cup walnuts, coarsely chopped
  • 1 cup grated Fontina cheese (great nutty flavor), or your favorite type

Preparation

Preheat oven to 450. Slice a very thin layer from the base of a pepper so it sits upright. Slice off top, just below stem, and remove ribs and seeds from the pepper, Repeat with remaining peppers. Discard stems; chop tops and set aside.

In a medium saucepan, heat oil over medium. Add onion, zucchini, sausage (remove meat from casings), coriander, and chopped tops; season with salt and pepper. Cook until onion is soft and sausage is cooked through with browning.
Add quinoa and garlic, and cook until fragrant, 1 minute. Add 1 cup of water and bring to a boil. Reduce to a simmer, cover and cook until water has been absorbed and quinoa is tender, 11-13 minutes.
Remove from heat, and stir in walnuts, and 3/4 cup cheese; season with salt and pepper.

Divide evenly and stuff peppers with the quinoa mixture; place in a baking dish. Place 1 cup water in the dish, cover with foil and bake until peppers are tender, about 25-30 minutes. Uncover, and top with remaining cheese and bake until cheese melts and gets bubbly. Yummy and fillling!

I got some free yogurt coupons from the nice people at Stoneyfield Farms a little while ago.  I had never had Oikos before, but as you all know I’m a huge greek yogurt fan.  I practically put it on everything!  So I decided to give it a try and compare it to my most beloved and cheaper TJ’s brand.  I give you yogurt battle . . . Oikos vs. TJ’s in the ultimate showdown of thick and creamy goodness!

I decided to try a variety of flavors, even though I’m not big on the flavored yogurts.  I tried plain, vanilla, strawberry and honey.  I have to say they were quite the treat, very creamy and smooth; you could tell it was really great quality.  I have to say though that the flavored ones were too sweet for me!  I don’t like all that sugary stuff at the bottom.  I would love for it to have much less.  Out of the flavored ones, I like the vanilla best because it wasn’t too sweet.  I’m so used to that slight tang from plain yogurt that flavored ones are a bit much for me now.

I also really enjoyed the shape of the container.  It was just wide enough to fill it with some great toppings like fruit and granola.  Like this . . . for a perfect snack.

So what’s the verdict?  I would have to say that I would love to purchase this yogurt in the future, but the only deterrent is the price.  At $1.99 a pop at Whole Foods, I cannot justify buying this all the time, but it is a really great treat 🙂
