Many thanks to all your wonderfully kind words and thoughts about Buster.  We really appreciate it.  We were pretty much a mess this past week, but with time it is getting easier.  I don’t think there can be anything that can replace our happy guy, but we have to just remember all the good times we had for sure.  I have gotten a little back logged on recipes, but I do have one of my favorite cabbage recipes for you!

lots of wedding planning

Hi there!  This past weekend Chris and I made the drive to Reno to take a look at our wedding location, meet with our coordinator and figure out other vendors including the wedding cake.  In fact, we had so much cake, I think we are pretty much set on eating any kind of dessert until the wedding in September!  Our weekend was jam-packed, but it was great to get to see the space and start the countdown for the wedding, which is now less than 3 months away!   (more…)

I tried a new recipe recently instead of trying to save every last ounce of time with tried and true favorites.  Yay!  I have to say that I unfortunately haven’t been in the kitchen as much as I used to and it stinks.  Chris and I have made a pact that once school is over and done with (hopefully soon before my head starts turning in circles), we are going to get back in the kitchen together more often.  It’s just been really tough lately.  Here is a tasty and pretty easy recipe that we both loved!   (more…)

back on the bike

Holy moly, I actually rode my bike for the first time in 3 weeks this past weekend!!! yippeeeee!  Well, I was sucking air like I had never gotten on a bike before and blowing snot rockets like you wouldn’t believe (watch out), but I actually made it without keeling over.  Yes. Now begins the long journey to get my stamina back.  It’s amazing how quick it goes.  I’m trying not to think about it too much and push ahead to get stronger!   (more…)

wine tasting at milo’s + christmas celebrations

Just as fast as the holidays snuck up on me, they vanished without a trace until next year when I hope to be a little more prepared! A little time off always goes by way to fast though, doesn’t it?  While I wasn’t in the normal holiday spirit, certainly the best part about this time of year is getting together with family and friends that we haven’t seen in awhile.  That’s really what it’s all about.  Yea, we didn’t have too many decorations, or a lavish meal, but we did get to spend time together and that’s what counts.  I even got some wine tasting in.  wooo!   (more…)

another quinoa creation

I guess I’ve been on an quinoa kick and whipped up another delicious dinner with the funky red quinoa stuffed into a kabocha cup.  I don’t know why but I’ve also been on an egg kick lately.  When nothing else sounds good, I think of a nice runny egg or two on top of something. Strange? I guess I’m getting my choline fix.  Or egg whites, oh yes egg whites, I’ve been microwaving those up a lot too.  Not sure what it is about them, but I am loving them at the moment!  Let’s see what this creation entails   (more…)

funky quinoa & walnut chicken

I saw a box of red quinoa at TJ’s the other day and had to give it a try!  Isn’t TJ’s just the bomb?  I’m so glad we have one fairly close to us. I always seem to find something new to try.  Well, that’s how I am at most grocery stores, go in for one or two things and come out like a kid in a candy store.  Chris says I am no longer allowed in Whole Foods, ha! I also made my usual walnut crusted chicken with the quinoa dish, but added another ingredient for some extra crunch and texture.  You’ll see!   (more…)

and so it begins

The countdown that is!!!  aaaaah! In about 6 days I’ll be riding my first century bike ride in Napa, CA and supporting the great cause of the LiveStrong Foundation.  I really can’t believe it.  honestly.  When Chris and I first started getting somewhat serious into cycling, and he started doing century rides, I thought . .  nah, I can’t imagine riding 100 miles?! Now, about 4 months of training later, I feel pretty darn strong and 65 miles isn’t all that bad, so there’s no turning back now.  This is it!   (more…)

beluga lentils & quinoa stuffed kabocha

I found some pre-cooked black beluga lentils at TJ’s and love their nutritional punch!  Chrysta had posted a killer looking lentil and beet salad a little while ago, and ever since then I’ve been thinking I need to make some lentils! 🙂

Lentils are great for a filling, fiber-rich protein source.  These ones were great because they were already cooked too!  I had a local kabocha squash on hand from the farmer’s market, so I wanted to incorporate them somehow.  When I saw that I still had some of TJ’s Harvest blend and some quinoa in the pantry I knew just the thing to do . . . stuff it! oh yeah (more…)

it’s already Friday?

Usually the weeks just draaaaag for me, but for some reason this one flew by!  Maybe because it was the first week back?  Who knows, but that’s alright with me.

Oh boy I am sore from kick-my-butt box on Wednesday!  Every little back muscle along my rib cage is sore and of course my bum and abs.  I couldn’t manage to make it to 6am spin this morning, but that’s okay because I want to be ready for our Great Harvest Red Rock bike ride on Saturday!  I’m looking forward to riding the Red Rock loop for the first time.  It’s about 41 miles and Great Harvest is providing breakfast for us before the ride, yay!

Yesterday morning I put all the prepped ingredients in the crock-potfor a stew to be ready for us when we got home.  I’m in love with this new crock-pot and it’s so much bigger than my old one!  I would highly recommend this one because it has several different cooking settings and a probe insert.
